At Grand Nikko Tokyo Daiba, we offer a “Gastronomy Plan” that explores regional ingredients and culinary cultures, expressing the unique local context and value of each area through our cuisine.

The focus this time is Tokushima Prefecture, blessed with lush mountains, clear streams, and the bounty of the sea and mountains nurtured by the Naruto Strait. Our chefs traveled to the region in person, interacted with local producers, and carefully selected seasonal ingredients to showcase Tokushima’s rich culinary culture using techniques that highlight the unique character of each restaurant.
The course menus, featuring Tokushima’s signature ingredients—such as Awa-O-Dori chicken, Awa beef, and Naruto sea bream—as well as flavors deeply rooted in the local region, allow guests to experience the charm of the local climate, culture, and seasons with every dish.Through this program,

◇Teppanyaki Icho “Tokushima Course”
We have transformed ingredients from Tokushima Prefecture—nurtured by its bountiful seas and mountains—into a single course menu, using techniques unique to teppanyaki and the chef’s artistic sensibility.In addition to Tokushima’s signature ingredients—such as conger eel, Naruto sea bream, Awa-O-Dori chicken, Tokushima Three-Star Beef, and Awa Beef—we incorporate regional flavors like sudachi, Yukou miso, and Naruto Kintoki sweet potatoes to create exceptional dishes that further highlight the unique charm of each ingredient.Among these, the “Tokushima Three-Star Beef: Grilled Inner Thigh with Seared Crust” and the “Awa Beef: Aged Sirloin Teppanyaki with Ai Salt,” which concentrates the meat’s umami, are signature dishes of this course.To round out the meal, we serve garlic rice infused with the aroma of Yuko miso, and for dessert, a dish featuring Naruto Kintoki sweet potatoes. From appetizer to dessert, this teppanyaki course is designed to let you experience Tokushima’s rich natural environment and culinary culture with all five senses.

We’ve crafted grilled dishes that bring out the natural flavors of the ingredients by incorporating the bountiful seafood of Tokushima—such as conger eel and Naruto sea bream—along with the bounty of both land and sea, including Awa-O chicken and Tokushima Three-Star Beef.We offer dishes that highlight the unique characteristics of each ingredient, such as a carpaccio inspired by the
whirlpools of the Naruto Strait, “Tokushima-grown lotus root and white miso cappuccino-style,” which features contrasting textures, and “Grilled Tokushima-grown hamo and jade eggplant with a nage sauce scented with suji aonori.”For the main course, savor Tokushima Three-Star Beef—which combines the umami of high-quality fat with the robust flavor of lean meat—paired with seasonal vegetables from Tokushima and yuzu moromiso.This time, we’ve prepared two types of courses—priced at ¥18,000 and ¥14,000—crafting a gastronomic experience unique to The Grill on 30th that fully incorporates Tokushima’s ingredients from appetizer to dessert.

We have crafted a single course featuring the finest ingredients from Tokushima’s mountains and seas, using the diverse techniques unique to Chinese cuisine. From seafood such as
red-legged shrimp and Naruto sea bream to Tokushima’s signature ingredients like Kamiyama chicken, Awa-Oji chicken, and Awa beef, we incorporate these elements throughout the menu to bring out the distinctive flavors of each ingredient.From appetizers to steamed shark fin soup, aromatic fried dishes, and meat dishes, each plate showcases the appeal of Tokushima’s ingredients through distinct cooking methods.To round out the meal, we serve Tokushima ramen, and for dessert, we offer treats unique to Tokushima, such as yuzu-scented and Naruto Kintoki sweet potato-filled fried buns. Through traditional Chinese culinary techniques, this exclusive gastronomic course at Tōri allows you to savor the bounty of the mountains and seas and Tokushima’s rich food culture.
